New Orleans legend, invented by Henry Ramos in 1888. Gin, cream, citrus, egg white and orange flower water — shaken for 12 minutes by Ramos's army of shaker boys. Impossibly silky.

Ingredients
- London Dry Gin4.5 cl
- Fresh lemon juice1.5 cl
- Fresh lime juice1.5 cl
- Simple syrup2 cl
- Heavy cream3 cl
- Egg white1
- Orange flower water3 dashes
- Vanilla extract2 drops
- Soda waterto top
Instructions
- 1Dry-shake all ingredients except soda water vigorously for 2 minutes (no ice). This builds the foam.
- 2Add ice and shake for another 2 minutes until very cold.
- 3Strain into a chilled highball glass without ice.
- 4Slowly top with soda water — the foam will rise above the rim.
- 5No garnish needed. Serve immediately with a straw.
